  • 1 stewing chicken, cut into serving pieces

Method

  1. Weigh chicken pieces. Wash and season according to Table for Seasoning Chicken.
  2. Place chicken pieces in a caldero or heavy kettle. Add ingredients included in B. Bring rapidly to a boil. Reduce heat to low, cover and cook for 1 hour.
  3. Uncover, add butter included in C and cook about 30 minutes<
