  • 3 large ripe plantains (amarillos)

Method

  1. Peel plantains. Make a deep gash, lengthwise, to allow for stuffing.
  2. Melt butter slowly. Add plantains and brown lightly over moderate-high heat.
  3. Fill gashes with slices of cheese. Top with sugar, cover with milk and add cinnamon stick. Cover and cook over moderate heat for 10 minutes.
