A

  • 6 large ripe, partially ripe plantains (amarillos)
  • 2 quarts (8 cups) water

Method

  1. Cut plantains in two and without peeling, bring to a boil in water and salt, included in A. Reduce heat to moderate, cover and boil for 20 minutes. Drain, peel, and mash.
  2. Add ingredients included in B, and mix.
  3. Heat oven to 350°F
