  • pounds pearl hominy
  • 8 quarts (32 cups) water

Method

Hominy Paste

  1. Combine ingredients included in A and boil rapidly, covered, for 2 hours. Soak overnight.
  2. Drain and reserve only cups liquid. (Liquid will be thick and white.)
  3. Put drained hominy in an electric blender with the reserved liquid and blend thoroughly.</
