  • 1 pound apio, peeled and cut into pieces (see Glossary)
  • 1 quart (4 cups

Method

  1. Bring water with salt included in A to a boil. Wash apio and boil, covered, for 40 minutes at moderate heat. Drain and mash until smooth.
  2. Add ingredients included in B and mix well.
  3. Deep-fry mixture by spoonfuls in fat, heated to 365°F., until golden brown. Remove and drain on absorbent paper.
