  • 1 pound white yautía (see Glossary)
  • quarts (6 cups)

Method

  1. Peel and wash the yautías. Cut into pieces and place in a pot with water and salt included in A. Bring to a boil over high heat. Reduce heat to moderate and boil for 45 minutes.
  2. Drain the yautías and mash immediately. Add shredded cheese and mix. Beat eggs and salt, add and mix.
  3. Drop mixture by spoonfuls in fa
