A

  • 1 pound ñame, peeled (see Glossary)
  • quarts (6 cups)

Method

  1. Cook ñame in boiling water with salt included in A for 40 minutes, covered. Drain and mash well while still hot.
  2. Add ingredients included in B and mix thoroughly.
  3. Drop mixture by spoonfuls in fat, heated to 375°F., until golden brown. Remove and drain on absorbent paper.
  4. Serve sprinkled with sifted confecti
