  • 2 pounds white yautía (see Glossary)
  • 1 teaspoon salt

Method

  1. Wash and peel the yautías. Wash again and grate.
  2. Add salt and baking powder and mix.
  3. Drop mixture by spoonfuls in fat, heated to 365°F., until golden brown. Remove and drain on absorbent paper.
