Method

  1. Prepare white sauce as follows: Melt butter over low heat, blend in flour, salt and nutmeg. Add milk gradually and stir over moderate heat, until it boils and thickens.
  2. Add chopped eggs, mix, and allow to cool.
  3. Form into croquettes and coat with crumbs. Break egg into cup, add salt and water. Beat with fork until blended. Dip croq
