  • 2 pounds very small potatoes
  • quarts (6 cups) boiling water

Method

  1. Scrub and wash potatoes. Cook, without peeling, in water with salt included in A for 25 minutes, covered. Drain and peel at once.
  2. Deep-fry in fat, heated to 350°F., about 5 minutes.
  3. Remove potatoes from fat and place on absorbent paper. Cover with absorbent paper and pound with the palm of the hand to flatten each potato.</
