A

  • pounds pumpkin, peeled and cut into pieces
  • 1 quart (4 cups) water

Method

  1. In a kettle, combine ingredients included in A. Cover, and boil about 30 minutes, or until fork-tender.
  2. Meanwhile, caramelize a round 8 x 3-inch aluminum pan, without tube, by melting, slowly, sugar included in B to a light gold. Swirl pan to coat bottom and sides of pan with caramel. Set on a wire rack.
