  • 3 pounds medium-sized apples (red, heavy, and slightly sour)

Method

  1. Wash and peel apples, cut each into 8 wedges and core wedges. Rinse rapidly in water and salt included in A. Drain well.
  2. Place ingredients included in B in a deep pan. Add drained apple wedges and bring rapidly to a boil. Reduce heat to moderate and boil until syrup thickens to light stage (Candy Thermometer - 220°F.).
