Papaya furnishes its own juice when cooked. Therefore, the fruit should be chosen carefully. Too young papaya will be almost tasteless and will yield too much juice. Too ripe, papaya will be almost dehydrated, and will yield little or no juice. Since some papayas are more watery than others, cooking time should be adjusted accordingly.
