  • 2 pounds green, peeled and seeded papayas
  • cups sugar

Method

  1. Grate papaya and mix with sugar, cover, and cook over low heat for 30 minutes.
  2. Uncover, and cook until papaya turns light golden and syrup thickens to light stage (Candy Thermometer — 222°F.). (When dessert is ready, it should have a scanty syrup, almost dry.)
  3. Allow to cool and pour into dessert bowl.</
