  • 6 mangoes (non fibrous)

Method

  1. Wash and peel mangoes. Place in a pot and cover with water. Bring rapidly to a boil. Remove mangoes and measure 4 cups of liquid.
  2. Combine liquid with sugar in a pot. Add mangoes and boil over moderate heat until syrup thickens to light stage (Candy Thermometer — 222°F.). Add vanilla when almost done, and mix.
  3. Allow to cool
