  • 1 ripe mamey, about pounds (Select mamey that is not too ripe)

Method

  1. Peel, wash, and dice mamey. Soak in water and salt included in A for 30 minutes.
  2. Drain and place in a pot with water included in B. Bring rapidly to a boil. Reduce heat to low and cook for 10 minutes.
  3. Add sugar, mix, and bring rapidly to a boil. Reduce heat to moderate and cook until syrup thicke
