Ingredients

  • cups sugar
  • 1 cup water
  • 1 lime peel

Method

  1. In a small saucepan, mix sugar, water and lime peel. Boil until syrup thickens to soft crack stage (Candy Thermometer— 270°F.). Remove lime peel.
  2. In large bowl of electric mixer, beat at high speed egg whites until stiff. Continue beating while pouring the syrup slowly. Beat at high speed for 20 minutes longer.
