  • ½ cup water
  • cups sugar
  • 1 lime peel

Method

  1. In a small saucepan, combine water, sugar, and lime peel. Boil, without stirring, until syrup thickens to hard ball stage (Candy Thermometer - 265°F.).
  2. In large bowl of electric mixer, beat at high speed egg whites until stiff. Continue beating while pouring syrup slowly. Beat until mixture becomes thick enough to be handled and shap
