Adobo is a blend of ingredients rubbed into meat or poultry to impart a unique seasoning. (Basic seasoning for each pound of trimmed meat)

Ingredients

A

  • 1 peppercorn (whole black pepper), crush and mix in a mortar
  • ¼ teaspoon dried whole orégano, crush and mix in a mortar

Method

  1. Mix crushed ingredients included in A with ingredients included in B.
  2. Rub seasoning into meat thoroughly and set in the refrigerator for several hours. (For seasoning poultry, see Table for Seasoning Chicken.)
