Tapioca pudding is one of the most divisive desserts I’ve encountered. Many people are not fond of the texture, but many more just think they don’t like it because there is a lot of bad tapioca puddings out there. Me? I love it. When made with good ingredients, it has all the pleasantries of a good custard with an extra bit of bubbly delight. Small pearl tapioca is my preferred size.
