I find mulberries the least interesting of the drupelets. Despite their beauty—large, uniform berries and a royal purple color—they often lack depth of flavor. Again, an acid perks them up, and here lime is my citrus of choice. It is a natural combination with the coconut pudding, but something as ubiquitous as lemon or as rarified as yuzu would be a treat.
