Whimsical is an over- and often misused word to describe food, but this dessert is straight whimsy for me. Floats might just be my favorite dessert because they are ebullient, lighthearted, and easy to execute. This play on the classic float feels updated enough for a fancy dinner party without sacrificing any of the fun.
Divide the sherbet evenly among four tall, Collins-style glasses, adding a few ground cherries between each scoop of sherbet. Spoon 2 Tbsp of syrup into each glass and top with the club soda. Using a long spoon or straw, give the glasses a swirl and serve immediately.
