Lindsay Zamora is a truly wonderful cook with whom I was fortunate enough to work for a few years. One of my favorite things she ever made were oatmeal baked apples, which she described dryly as “an apple cut in half and topped with raw granola that you then bake.” She undervalued their deliciousness.
