Tapenade is an olive paste that can be made easily, but you can find some delicious ready-made versions in good delicatessens.
Mix the butter and rocket and season lightly. Spread the rocket butter on both sides of each bread slice. Spread a layer of tapenade onto two of the slices of bread. Top with sunblush tomatoes, covering the whole surface. Scatter over the fontina cheese, then close up the sandwiches with the other two pieces of bread, pressing down gently to make them compact.
