Zaatar is a dry spice and seed mixture popular throughout the Middle East. It is composed of dried thyme, sumac (a lemon-tasting red berry that is dried) and sesame seeds. It is purchased in its made-up form.

Ingredients

  • 20 small labna cheese balls, drained and dried
  • 3 tablespoons zaatar spice mix
  • 2 plum tomatoes</

Method

Place the labna balls in a bowl, sprinkle over the zaatar and toss lightly to ensure an even coating. Set aside for 1 hour. Using a fork, lightly crush the cheese. Add the tomatoes, shallot and herbs and toss together again. Place on to serving plates in a pile, drizzle over the olive oil and serve with warmed flatbread.
