In this Asian soup (Tom Kha), coconut milk adds a wonderful sweet creaminess while the mint adds a refreshing fragrance. Egg noodles can be purchased from leading stores or oriental grocers. Vietnamese mint or ‘hot’ mint is in fact not a mint at all. Revered in the Far East, it has a slightly spicy, acidic flavour. It’s worth shopping around for but normal mint is fine if it’s not available.
