This is a chilled variation of chowder made with buttermilk.


  • 20 g unsalted butter
  • 1 onion, chopped
  • 1 stick of cele


Melt the butter in a large pan, add the onion, celery, garlic and thyme and leave to cook over a low heat for 10-12 minutes until the vegetables are soft. Add 750 ml water to the vegetables with the cob centres. Bring to the boil, reduce the heat and simmer for 20 minutes over a gentle heat until t
