Orrechiette (or ear-shaped pasta) are made from flavoured durum wheat semolina and can be difficult to perfect, especially the shaping technique. Delicatessens seem to sell good-quality ones, so it is sometimes not worth making them yourself. For all you enthusiasts and foodies, I include a recipe for fresh orecchiette anyway. If using bought orrechiette you will need 400 g for this recipe. If you can’t find broccoli rabe, then use any kind of greens.
