For this dish you will need to buy a ‘chitarra’ or spaghetti guillotine, available from good cookery shops or you can use the flat thinnest cutter of a pasta roller. If not, substitute with good-quality bought spaghetti.
Prepare the dough in the normal manner but rest for 30 minutes. Divide the dough into four and roll out each piece through the thinnest cutters of a pasta roller. Cut the rolled pasta to fit the chitarra and trim the edges neatly. Using a rolling pin, roll out the pasta through the strings to create the spaghetti.
