Having fallen into many stinging nettles as a child, you can imagine my horror to find you used them in cooking! Perhaps it’s our way of getting them back. During the spring, nettles are at their best and most delicate. Ideally they should be no larger than the palm of your hand. Once picked, they lose their potency, and once cooked have no symptoms at all.
