Kadaifi (or kataifi) is a type of filo pastry that is finely shredded and makes an interesting wrapping for many dishes. It is available from Middle Eastern or Greek stores. Yorkshire Blue is a creamy blue cheese available in supermarkets.
Coat the apple with the lemon juice and toss together for 1 minute.
For the kadaifi, place the crumbled cheese in a bowl and add the diced apple, the mustard, paprika and breadcrumbs and finally the egg yolk. Season and bring the mixture together to a thick paste that holds its shape. Refrigerate for 2 hours, then remove and shape into eight small patties. Dust with a little flour.
