An interesting dessert for tofu lovers. Green tea is served in Japanese homes as a sign of welcome and is becoming increasingly popular in Britain. It is wonderful when infused into a sorbet, as used in this dessert.

Method

For the green tea sorbet, place 450 ml water, the sugar and glucose in a pan and bring slowly to the boil. Remove from the heat, stir in the tea powder and stir until dissolved (or if using leaves just stir), remove from the heat and leave to infuse until cold, then strain. Transfer to an ice-cream
