There is an understandable degree of confusion about mushrooms; not just those which more and more people seek out in the wild, but those we buy in shops and supermarkets – the majority of which are cultivated. The true field mushroom is Agaricus campestris. If you know where to gather them, lucky you. If not, buy the largest cultivated flat-cap mushrooms you can find – Agaricus bisporus – which have the best flavour.
