The combination of chocolate, almonds and pears is classic and very good. You want a pear like a Cornice, ripe but still firm. If this is difficult to find, then in the domestic context good quality tinned pears could be substituted. However, freshly poached pears are by far the better option.
Peel the pears and put into a saucepan with all the other ingredients and bring to the boil. Lower the heat and poach for about 20 minutes until cooked all the way through, but not soft. Leave the pears to cool in the liquid. If using tinned pears, drain thoroughly.
