Making our famous confit potatoes creates an awful lot of spare potato trimmings. Rather than waste them, we created these, which elevate leftovers to something luxurious. They have an element of surprise: you expect a traditional croquette from the crispy exterior, but inside there is actually a rather decadent, oozy potato purée.
