This is a lovely and very economical dish, perfect for that depressing time in early January when very little is in season and all your money seems to have vanished. Thankfully, leeks reach their peak just after New Year. You can prepare the leeks, vinaigrette and breadcrumbs in advance. Cook the egg to order, though, otherwise the yolk will darken.
