Nothing smells more like the weekend than a shoulder of lamb slow-cooking in the oven, its fat rendering and caramelising and tenderising the meat as it does so.

Ingredients

  • 1 lamb shoulder, 2 kg or so
  • salt, to taste

Method

Preheat the oven to 220°C. Season the lamb shoulder very generously with salt all over and place in a large roasting tray.

Roast for 30 minutes
