Many people are scarred by soggy childhood cauliflower. But cover it in butter and roast it in the oven and magic occurs: an amazing crunchy, nutty exterior with soft sweet florets inside, and buttery, sweet caramelisation on the bottom from where it’s been sitting on the the tray.
Trim and discard the root and outer leaves from the cauliflower, then rub the cauliflower all over with the beef dripping and season with salt.
Place in a roasting tray and
