We love this mostly because of the crazy variety of textures. Pretty much any vegetable dish is enhanced when it combines different layers of crunchy and soft, smooth and chunky. It works brilliantly as a side to a roast but is equally delicious on its own as a mid-week vegetarian meal, maybe with a lemony rocket salad on the side.

Ingredients

  • 50 ml mild olive oil
  • 1 small Delicia squash
  • 100 ml

Method

Preheat the oven to 200°C. Deseed the squash and cut it into 8 pieces.

Heat the olive oil in a large frying pan. Fry the squash cut-side down for a few minutes until browned, then transfer to a roasting tray. Season with salt and pepper and
