We love this mostly because of the crazy variety of textures. Pretty much any vegetable dish is enhanced when it combines different layers of crunchy and soft, smooth and chunky. It works brilliantly as a side to a roast but is equally delicious on its own as a mid-week vegetarian meal, maybe with a lemony rocket salad on the side.
