We usually serve this alongside fresh, peppery radishes. It’s the most delicious and indulgent accompaniment to any raw vegetables. Try using it as a spread for bread, perhaps dipped in chicken soup.
Whip the butter, chicken fat, salt and lemon zest to a light cream using the whisk attachment on your food mixer (this should take about 5 minutes).
Toast the sesame seeds in a dry frying pan over a medium heat, taking care not to burn them. Leave to cool before scattering over the chicken fat butter.
