Like our flapjack, this is not as sugary as you might imagine. This came about from the need for something a bit ‘mellow’ on the sweet counter. Great for when you need a sugar hit but not too much – a sugar nudge, if you will.


  • 235 g butter, at room temperature, plus extra for the tin
  • 280 g granulated sugar, plus extra for the tin


Preheat the oven to 160°C. Line a 20cm round springform cake tin with baking parchment and brush with a little butter and sugar.

In a large bowl, cream the rest of the butter and sugar together until they are light and fluffy and almost white in colour. Add one of the eggs and
