This quiche may he made with any combination of wild and button mushrooms, depending on what is available. Wild mushrooms have a strong flavour so the proportion of these to the mild-flavoured button mushrooms should be adjusted according to personal preference.



  1. Lightly grease a 20.5 x 2.5 cm (8¼ x 1 inch) loose-bottomed flan tin. Roll out the pastry on a lightly floured surface to a thickness of 3 mm (⅛ inch) and line the prepared tin (see Chef’s techniques). Preheat the oven to moderate 180°C (350°F/Gas 4)
