Both colourful and tasty, this quiche is best served warm. If yellow capiscum is not available, use red and green only, bearing in mind that the red capiscum has a much softer, sweeter flavour than the green.

  • 1 yellow capsicum (pepper)

Method

  1. To make the filling, grill the capsicums following the method in the Chef’s techniques, then slice the flesh lengthways into strips.
