The Dijon mustard added to this delicious rich tart filling gives the cheese flavour a good ‘lift’. If desired, a small amount of cayenne pepper could also be added.
Preheat the oven to moderate 180°C (350°F/Gas 4). Grease a 20.5 x 2.5 cm (8¼ x 1 inch) loose-bottomed flan tin. Roll out the shortcrust pastry on a lightly floured surface to a circle about 3 mm (⅛ inch) thick and line the prepared tin (see
