This fabulous combination of juicy chunks of chicken and plump, luscious cashew nuts is my father’s favorite Thai dish, his order every time we eat at a Thai restaurant. In Chinese restaurants he goes for the chicken with almonds, a good nut to substitute in this simple recipe if you don’t have cashews.
