In Thailand you can enjoy tender noodles around every corner, in great big bowls brimming with delicious broth. Market vendors and noodle cafes serve customers from before dawn until well past midnight. Some traveling noodle-mongers bring the entire operation to their customers, charcoal stove and all, in twin baskets bobbing from a length of bamboo balanced on their shoulders. Since noodles literally come to them, Thais don’t make soup noodles at home, but they could, and so can you.
