This delicate, fragrant all-in-one ramen dish is flavoured with just a hint of chilli, allowing the subtle taste of the mushrooms and vegetables to take centre stage. Light and refreshing, it contains fewer noodles than some ramen, but you can always increase the quantity if you want a more substantial dish.

  • 1 litre/ pints/4 cups water

Method

  1. Put the measured water in a pan and bring to the boil. Measure out 150ml/¼ pint/⅔ cup of this boiling water into a heatproof bowl, then add the miso and stir until dissolved. Set aside.
  2. Meanwhile, put the noodles in a pan of boiling water and cook for 4–6 minutes or according to packet instructions, until cooked. Drain the noodles in a colander, rinse under col
