This ramen features a rich broth base of red miso in which lie noodles topped with crunchy sweet-and-sour veggies and savoury marinated soft-boiled eggs. Delicious.

  1. First, prepare the sweet-and sour-vegetables. Heat the oil in a wok, frying pan or skillet, add the sliced carrots and season with salt and pepper. Add the sliced spring onions and toss everything around the pan.
  2. Mix the vinegar, sugar and chilli flakes together, raise the heat and add it to the wok. Allow the liquid to bubble, then reduce to a simmer and cook
