Making traditional hand-pulled ramen noodles is an art that takes many years of practice to perfect. It is usually best just to buy good-quality ones, especially since one of the joys of ramen dishes is their speed. However, if you do want to have a go at making noodles, this recipe creates softer-textured but slightly thicker noodles that taste wonderful and can be made using a rolling pin and knife, although a pasta machine is helpful if you have one.
