- 100 ml dry white wine

Salmon
- Place all the ingredients in a narrow pan except the fish and bring to the boil. Allow to simmer for 5 minutes.
- Remove the pan from the heat and add the fish leaving to gently cook in the residual heat for 8-12 minutes.
- Remove from the stock onto a warm plate and cover.
